I'm contemplating taking current 28" 19201200 monitor off the desk and hanging a pair of 30" IPS on the wall instead.
That's gonna mean a jump in pixel count needing a new PC.
Very little games but some video and pictures, lots of open-closing files. Maybe plug the cable TV into it and drive part of that video real estate. Also want a floppy drive for posterity, 8-12GB, Blue Ray RW and 2nd DVD RW. USB PCI card for imputs.
Would not open the box for updates.
Would raid a pair of SSD's be a benefit? 3rd mech TB HD for file storage.
The big concern is NOISE this is a small quiet office. Heat is not a concern but NOISE is very important.
Does DS make a quiet hi-perf machine? Is H20 cooling quieter than fans?

for a quick set of answers,
no raid for SSDs is not worth it
noise killing is very easy especially if you are willing to have some custom extra quiet parts
all of the ds builds are pretty quiet if you know what to choose, h20 is not quieter nor does it have less dust than air
