You would be better off with 2 GTX 980s over the Titan Z, for gaming. Beyond that, it is hard to say without knowing what monitor setup you have in mind (i.e. resolution(s) and number).

Need to change up the motherboard to one that supports SLI if you want to have two GTX 980 cards.

Titan Z has more VRAM for higher resolutions. If you're looking at 4K+, more and more games are starting to implement high-res textures and VRAM can play a major role if you choose to go that route.

If you do move to SLI I would also likely change the PSU to the 850 EVGA.
