Monitor: 2  23inch ISP 1920X1080 one for gaming
Usage: FPS Gaming
            Video Rendering a lot of it and Video Editing
 
Should I go with the Z77 Ivy or X79(6core) ?

For your video editing and rendering I would start with the Dreadnought Level 3.  The X79 platform is made for just that work, its quad channel ram and 6 core cpu able to handle the work quicker.

I have ordered it with the Sabertooth X79 and the i7 3930K 6 core.
