After creatively upping my budget, I have come up with the following:

I will have two ASUS PB278Q for this setup (a third one for surround later)

Two questions:

I can't get the configurator to acknowledge I don't have a 4.5Ghz processor.. not sure what to do about overclocking.

If at a later date, I want to upgrade my video cards (4k screamers.. just not yet) can I order them from Digital Storm ready to plug into my water cooling?
They all moved away from me on the bench there. The Group W bench.

Just to note the overclocking booster means overclocking your processor to 4.5 to 4.8 from 3.5

You'd have to send your computer back to DS for them to install them. You may be able to have them install the waterblock and then you could drain your system, disconnect the old ones, insert the new, and fill your system back up.

GTX 980 cards can handle 4K gaming...I game at 3840 x 2160p60 with some of my games on a single GTX 970. You may want to consider a third GTX 980 if you plan to run three Swift monitors as you indicate you plan on doing...while their resolution is roughly half that of a 4K screen, the refresh rate is around 2.5x.

With DS using quick disconnects on their water cooling you wouldn't have to drain the system.   You do have to install waterblocks, connect the ports together and reconnect in the loop. Not sure if DS does it, but my bet is they would sell you the cards and charge a fee to mount water block and necessary fittings for an easier swap. For some, doing it yourself isn't all that bad.

Thinking about it, you may want to wait for the Aventum III to come out a little bit later this year...you may be the ideal customer of that new machine. It is designed to be able to swap out components in a water-cooled system pretty easily. Just Google "Digital Storm Aventum III" and a few things from CES earlier this year should pop up.

I think a few months was mentioned for Aventum 3 release but couldn't really say for sure.

Even with Aventum 3 you'd still need cards with waterblocks installed. Plus quick disconnects being used now do make things a bit easier.

If upgrading to newer video cards are a concern with water you could just put the cpu under water and keep the cards on air. Just make sure the case has good airflow.   That also makes troubleshooting , like pulling a card, a lot easier.   Water is a nice feature but does have disadvantages.   

Big decisions.

I confess, I had thought to myself that 2 overclocked 980's would handle surround 1440. It won't unless you really want to throw away all the reasons you want 1440 (and overclocked sli 980s). In the end, after a bunch of research and "mock up" of what the system would look like. I honestly don't want surround. I have a hard enough time getting these old woman eyes to refocus on one screen.. let alone three. When the extra wide 4k's come out :) I am your gal.

so , minor changes. Dropped the Strix cards for straight 980s and added overclock the GPU (won't need the overclock or cooling since they are being overclocked and water cooled). I confess overclocking GPUs makes me nervous because of past heat problems. The water cooled will take care of that.

Dropped the CPU stage 2 overclocking since I didn't have the motherboard to support it.

The ASUS X-99 motherboards should all be able to support the stage 2 overclocking.

You may want to look at the LG 34UC97 & 34UM95 monitors. They are 34" with 3440 x 1440 (extra wide 21:9 aspect ratio). I'm using the 49UB8500 TV for a monitor, which is a UHD IPS panel.
