I just wondered in Win 7 ult is no longer an option on new laptops? The Krypton only offered home or win 8 in conf today.

As far as windows is concerned it isn't going away.

Win8.1 is probably being used for the touch screen.

I checked the lvl 3 krypton and you can change the OS to Win7 pro but I didn't see the ultimate version. Don't get home premium as it has a short lifespan.
Vanquish II Ultimate.

Maybe DS will confirm on here. I checked Krypt and Behemoth configs and they only offer win 8 or win 7 home now.

I think there was some recent change to OEM sales of Windows 7 that might be affecting availability, but DS would need to confirm.  I think they stopped the Anytime Upgrades last year.  The push to Windows 8.1 is in nearly full effect from MS now.  And Windows 10 is due this year, I believe.
